Friday Slipped Up On Me

Do y’all remember what it felt like when you were in High School, and the teacher told you there would be a test on Friday, but you got busy and plumb forgot? That’s how I feel this morning.

It’s a good thing that I’m addicted to designer coffee! If I hadn’t started jonesing for an iced mocha, I wouldn’t have stopped writing today’s post to run down to Jupiter House (my favorite coffee shop in the world). If I hadn’t stepped into Jupiter House I wouldn’t have heard Jeff say, “Are you having a good Friday?”

Thunder! I thought it was Thursday!

This week slipped away from me in a blur of activity. It was all fun, and that’s a good thing. However, I was writing a post about the tragic passing of one of my favorite institutions — no not Michael Jackson — Piggly Wiggly! I’ll save that for this weekend, because I have to be optimistic since Friday is “Only The Good.”

Since I’m unprepared, I’m going to try to fool you like I did my teacher in High School. I’m going to pretend I know what I’m doing, and y’all just play along. OK?

I’ll list three things I think are good this morning. If you don’t post for Only The Good Friday, maybe you can just tell me three things you think are good. Here goes:

  1. Celia Rivenbark. If you are unfamiliar with this author, she’d make some great summer reading for you. She is funnier than a rubber crutch, and we all need a good reason to laugh, don’t we? Go down to the library (to save yourself some bucks) and see if you can find the book entitled, We’re Just Like You, Only Prettier. If you can’t find that one, look for Bless Your Heart, Tramp. This Southern gal will have you in laughing fits, cross my heart.
  2. Good Summer Movies. I recommend Netflix, if you don’t have it, because going to the movies costs too much money. Just cook up a mess of popcorn and plop down on the couch with a movie you like. One that comes to mind, and that you might have never seen, is The World’s Fastest Indian.

    No, it’s not a Western! It’s a slightly fictionalized account of the real Burt Monro, a New Zealander who had a 1920 Indian motorcycle, and a dream of setting a world speed record in America at Utah’s Bonneville Salt Flats. It’s a feel good story about making a dream come true. Best of all, it stars Sir Anthony Hopkins. If all you know about Anthony Hopkins is his portrayal of the evil Hannibal Lecter in The Silence of the Lambs, then you have to see this film and get all thoughts of, “Well, Clarice – have the lambs stopped screaming?” out of your head. There is a reason that The Queen made Anthony Hopkins a knight — he’s one of the finest actors on the planet.

  3. Stir Fry! I love to cook things that are quick and easy in the summer, and if I can use what I have leftover it’s even better.

    Look through your fridge & see if you have any meat that you cooked for another meal (if not, get a chicken breast or a pork chop, and cut it up fine). Grab a bell pepper, an onion, a handful of mushrooms, and some summer squash (or zucchini, or broccoli or asparagus — whatever blows your dress up). If you don’t have those vegetables on hand, get creative with what’s there! Dice those vegetables.

    Put some oil in the skillet and heat it up, put the meat in first (if it is uncooked … you will want to cook it until it is browned), then throw all those vegetables in and fry it for about seven minutes. Add a dash of salt and pepper, some fresh ginger (to taste) and about a fourth of a cup of soy sauce. Put that over rice or noodles, and lunch is ready to serve.

I love stir fry. In fact, this summer, I’ll practically be living on it. My parents will be gone for 2 months and I can do my own cooking again! Yay!

What? No more Piggly Wiggly???? That’s just wrong. I’m sure you know that.

Trevor took over and reminded me it was Friday. But did his own thing anyway. Still, there’s some VERY good stuff in there. At the end, of course. *sigh*
