Cobbler For Two Posed A Berry Difficult Dilemma

Where is my grandmother when I need her? My Mamaw could adapt any recipe in a snap. If you walked into the kitchen and asked for a biscuit, she could make one in a heartbeat. I’m talking one biscuit. She didn’t need a recipe, she just grabbed a handful of flour, a pinch of baking powder, a sprinkle of salt, and a dash of milk. Presto! She mixed it, baked it, and you were on your way.

I could have used her expertise today! At the thrift store, I picked up a tiny baking casserole. I guess it’s probably an individual quiche pan. It just seemed like the perfect thing to use to make a berry cobbler for Mr. Tucker and I. If I made a whole cobbler, we would be obliged to gobble a whole cobbler, and we are watching our waists (mostly watching them grow despite all efforts to the contrary!).

I went on line to find a cobbler recipe, because I was too lazy to thumb through my cookbooks. I found a berry cobbler at Nancy’s Kitchen, but that doggone recipe called for a 9×12 pan … waaay too much for what I needed. “I’ll just divide it into fourths,” I thought.

Have you ever tried to measure 0.625 cups of something? It was no piece of cake, that’s for sure.

Mamaw would have just grabbed handfuls of ingredients and thrown them together and it would have been perfect! Mine wasn’t too shabby … Mr. Tucker didn’t complain and even licked the bowl. Now I need to go make notes about what I did so I can try to replicate it sometime.

Does anybody have a recipe for cobbler for two, so that I don’t have to think? My brain cells would be forever grateful.

Good luck!

I was just thinking about this yesterday. I would like to buy smaller cans of some things. I have been trying to cut down and just cook for two. But I open a can of something and half gets thrown out. Bad planning on my part I guess.

This is a good idea for a website. Meals for two…including cobblers.

It’s really hard, after cooking for a family, to cut back on recipes. My daddy used to make salads, and we joked that he started with a small bowl and ended up putting it in a 10 gallon drum … he didn’t know how to stop! Yes, it would make a good website, but I’m betting somebody has thought of that :-)

I don’t have one right off the bat, but when I have a baking dilemma, I always turn to the folks at King Arthur Flour, my favorite baking website. Their fruit cobbler recipe looks yum, makes a 9″ square pan, and looks like it could easily be cut in half–all the measurements are divisible by 2. That would give you half a 9″ pan, which sounds just about right for 2 people. Best of all, if you have a question, you can just fire up the chat window and someone will answer you. Here it is:

Baking is not quite as accepting of halving and doubling as other kinds of cooking. You can, however, make up your biscuit dough, cut it up and freeze it until you want it again. Alternatively you could try using bisquick and just eyeballing it. All the ingredients are in there in the proper proportion and it’s pretty hard to get it to fail. Your cobbler looks just yummy!

It WAS yummy! I had some Bisquick, but it had expired (my bad!). I hadn’t though of freezing biscuit dough, though! I didn’t know you could do that … I don’t know why (since it’s in the freezer section at the store DUH!). Thanks for the tip.
